Ik heb echt een heel erg onhandige keuken. Weinig opbergruimte, stomme richeltjes die altijd vet en stoffig worden, schrootjes op de muur van de vorige bewoners en stukken tegels die missen rondom mijn fornuis. Mijn keuken is werkelijk waar knudde. Om ruimte te maken heb ik in de afgelopen paar jaar al een aantal keer mijn keukenspullen flink uitgedund. Eerst waren het de dingen die na kerstpakketten bleven plakken in de keuken (soms letterlijk…..), daarna prullaria waar ik gewoon geen gebruik meer van maakte. Toen waren de borden en glazen aan de beurt. Het ruimde al lekker op!
Op een gegeven moment wilde ik eens kritisch kijken naar de hoeveelheid spullen die ik in de keuken had waar ik mee kookte en bakte. Heb ik werkelijk 23 bakvormen nodig?? Nee dus, een cakeblik, springvorm, een drietal braadsledes en een tulbandvorm volstaan prima. De rest ging naar Het Goed. En toen de pannen. Een mens heeft geen 17 pannen nodig. Echt overbodig. Zelfs als ik uitgebreid en voor gasten kook, gebruik ik maximaal vijf pannen. Dus. Er stond me een schone taak te wachten!
Mijn criterium was dat de pan een duidelijke dubbele functie moest hebben. Neem bijvoorbeeld De Braadpan. Ik braad er niet alleen vlees in, maar maak ook stoofschotels, de allerlekkerste gehaktballen, curry en zelfs soep, dus die moest blijven! Vervolgens mijn gewone pannen. Ik had twee en een halve set. Overgebleven van een paar keer pannen kopen. De set met doorzichtige deksels bleef. Toch wel handig om te kunnen zien of de rijst gaar is, zonder het deksel op te hoeven tillen.
Toen waren de koekenpannen aan de beurt. Nou is het zo dat ik al jaren geen Teflonpannen meer in huis heb. Al voor ik het artikel over Teflon schreef, gebruikte ik al geen Teflon meer. En ik heb in die tijd verschillende soorten koekenpannen en wokpannen uitgeprobeerd. De BK Balans was mijn eerste koekenpan. Lekker zwaar (hou ik van), stevig handvat en duur! Maar wat was dat een tegenvaller, zeg. Al na een half jaar begon de pan enorm te kleven en kon ik geen ei of pannenkoek meer bakken. Het was hoe dan ook roerbak. En roerei is leuk, maar roerpannenkoek duidelijk minder.
Dus die ging er uit. Daarna heb ik een tijd keramische koekenpannen gehad en dat was een hele prima pan. Iets lichter, mooi kleurtje en minder duur. Maar daar bleek al gauw dat de goedkopere keramische koekenpannen (denk aan wat je op de markt of bij de Action kan krijgen) ook echt ‘goedkoop’ waren. En dus duurkoop, want er zaten krassen in ondanks dat ik alleen maar houten spatels gebruik en ook die begonnen snel te kleven en aan te bakken. Een duurdere koekenpan die ik had (en niet kleefde), liet op een bepaald moment zijn handvat los en toen hij op een ongelukkige manier op de grond viel, en het handvat er vanaf knapte, was die niet meer bruikbaar helaas! Erg jammer, want ik denk dat de dikkere keramische koekenpannen toch de betere keus zijn qua gebruik en duurzaamheid.
Ruim een jaar geleden heb ik mezelf getrakteerd op twee koekenpan van Jamie Oliver. De Hard Enamel serie die een anti-aanbaklaag hebben die vrij is van de chemische PFOA. Het zijn fijne pannen, liggen goed in de hand en komen in veel verschillende maten. Maar qua prijs zijn ze toch weer een stukje duurder. Helaas is in één van die pannen een paar keer te hard gebakken en te agressief in geschraapt om’t weer schoon te krijgen. Antikleeflaag naar de knoppen dus.
Maar ik heb nu een tijdje weer een keramische hapjespan slash koekenpan in mijn bezit. Kitchen & More vroeg of ik er eentje wilde testen en er een review over wilde schrijven. Aangezien ik zoetjes aan op zoek was naar een andere koekenpan, leek me dit wel een goed idee. Wat ik net al schreef, mijn ervaring is dat de wat dikkere, zwaardere kwaliteit keramische pannen gewoon erg lang meegaan en echt een hoop andere koekenpannen overbodig maken.
Het eerste wat ik deed toen de hapjespan arriveerde was een stapeltje pannenkoekjes maken. Ja, als een pan nageltjesnieuw is bakt ‘ie natuurlijk het best! Dus dat is geen uitdaging. Ik ben ook niet geïnteresseerd of een nieuwe pan goed bakt. Geloof me, zelfs een nieuwe pan bij de Action vandaan bakt de eerste keer goed.
De grote vraag is: hoe houdt zo’n pan zich op langere termijn staande? Gaat hij uiteindelijk toch kleven? Kan hij in de vaatwasser of niet? Hoe doet ‘ie ’t als je er zout in hebt gestrooid en tomatensaus er in hebt gemaakt. Want dat zijn de dingen waar een gemiddelde koekenpan niet blij van wordt.
Wat me opviel aan deze hapjespan is dat hij opvallend degelijk is! Hij heeft een dikke bodem en een stevig handvat. Hij kan wel wat hebben. Ik heb er onderhand vier curry’s, twee keer zalm, verschillende keren eieren en een keer wentelteefjes in gebakken. De rode curry kleurde de binnenkant wel erg oranje. Toen heb ik de pan met een sodasopje schoongemaakt. Alle andere keren ging hij gewoon in de afwasser. Want dat kan gewoon! Resultaat? Hij bakt nog net zo mooi pannenkoeken als de eerste keer. Zonder olie, gewoon met een houten spatel de pannenkoeken omdraaien. Allemaal geen probleem.
En omdat er een deksel bij zit kan ik de pan goed gebruiken om kliekjes in op te warmen (we hebben geen magnetron). Gewoon op een laag pitje, beetje water erbij en lekker 5 minuten laten warmen. Ik heb de pan nu standaard op het fornuis staan, klaar om te gebruiken wanneer nodig is.
Na een aantal weken lijkt ‘ie nog steeds van geen wijken te weten. Hij is ook man-proof. Simon zet het vuur altijd aan onder de pan alsof hij gaat wokken, maar gaat daarna pas op zoek naar de ingrediënten. Ja echt. Dus die pan staat daar eindeloos heet te worden, zonder dat er wat in zit. Ik heb ‘m nu twee keer betrapt en er de tweede keer echt wat van gezegd, maar om heel eerlijk te zijn, lijkt het niet dat de pan er onder geleden heeft… Hopelijk leest Simon dit artikel niet want misschien ben ik wel een beetje uit m’n slof geschoten… 😉
Dus ik ben ontzettend blij met deze pan! Een dubbele functie, kleeft niet, krast niet, kan gewoon in de afwasser. Echt heel erg fijn! De pan die ik heb is 24 cm in doorsnee en dat is voor ons gezin van vier personen groot genoeg.

Mpox – formerly known as monkeypox – is a highly contagious disease and has killed at least 635 people in DR Congo this year.
Even though 200,000 vaccines, donated by the European Commission, were flown into the capital, Kinshasa, last week, they are yet to be transported across this vast country – and it could be several weeks before they reach South Kivu.
“We’ve learned from social media that the vaccine is already available,” Emmanuel Fikiri, a nurse working at the clinic that has been turned into a specialist centre to tackle the virus, told the BBC.
He said this was the first time he had treated patients with mpox and every day he feared catching it and passing it on to his own children – aged seven, five and one.
“You saw how I touched the patients because that’s my job as a nurse. So, we’re asking the government to help us by first giving us the vaccines.”
The reason it will take time to transport the vaccines is that they need to be stored at a precise temperature – below freezing – to maintain their potency, plus they need to be sent to rural areas of South Kivu, like Kamituga, Kavumu and Lwiro, where the outbreak is rife.
The lack of infrastructure and bad roads mean that helicopters could possibly be used to drop some of the vaccines, which will further drive up costs in a country that is already struggling financially.
At the community clinic, Dr Pacifique Karanzo appeared fatigued and downbeat having been rushed off his feet all morning.
Although he wore a face shield, I could see the sweat running down his face. He said he was saddened to see patients sharing beds.
“You will even see that the patients are sleeping on the floor,” he told me, clearly exasperated.
“The only support we have already had is a little medicine for the patients and water. As far as other challenges are concerned, there’s still no staff motivation.”

Although he wore a face shield, I could see the sweat running down his face. He said he was saddened to see patients sharing beds.

Het is een kwestie van de pan eerst heel goed verhitten, dan een beetje kokosolie. Dan kun je erin bakken wat je wilt zonder dat het blijft plakken.
